Darryl Hand
Executive Chef – Hotel Indigo Melbourne Little Collins, & Holiday Inn Melbourne Bourke Street Mall

With more than four decades of culinary experience and a deep-rooted career in hotel dining, Darryl Hand brings a considered vision to his role as Executive Chef at two of Melbourne’s most anticipated hotel openings; Hotel Indigo Melbourne Little Collins and Holiday Inn Melbourne Bourke Street Mall.
Victorian-born, Hand’s passion for food was sparked as a child baking ANZAC biscuits with his mother, who remains one of his most enduring inspirations. Beginning his professional career in the kitchen of Hilton Melbourne in the 1980s, it was there he laid the groundwork for a career defined by classic technique and a passion for beautifully executed food.
Hand’s food is rooted in European technique, with a deep respect for quality ingredients; sea salt flakes and extra virgin olive oil are his non-negotiables. Most recently, Hand brought his signature style to the fore at Novotel Preston and Mercure Doncaster (2019–2025) reshaping the hotels’ food offering with elegant restraint and purpose.
Hand’s path has taken him through some of Australia’s most respected kitchens, including the acclaimed Stokehouse in St Kilda and the Victorian Arts Centre, where he held the role of Executive Chef from 2013-2016.
Known for his calm and supportive leadership, Hand has led teams at leading hospitality groups including Collins Square Hospitality Group (2016–2018), and helped bring to life key openings such as the Albert Park Hotel and The London in Port Melbourne.
Among his career highlights is cooking for royalty and world leaders, Queen Elizabeth II, Queen Beatrix of Holland and British Prime Minister, Margaret Thatcher – a moment that speaks to the quiet precision and excellence that define his craft.
